Bush Dukkah Prawns

Bush dukkah is the Australian take on the traditional dukkah used in many dishes around the globe. Bush dukkah combines the flavours of native herbs and spices. It can be sprinkled on meat and seafood dishes as well as in salads on on vegetables. Here its used to coat king prawns and make a winning dish!


Prep time: 10 minutes

Cook time: 5 minutes 


  • 12 large king prawns (peeled, tails intact)
  • 2 teaspoons olive oil
  • 1/2 cup crushed macadamia nuts
  • 2 teaspoons sesame seeds
  • 2 teaspoons ground lemon myrtle
  • 2 teaspoons saltbush (or sea salt)
  • 1 teaspoon pepperberry (or pepper)
  • 1 teaspoon ground wattleseed


  1. Combine all dry ingredients in a small bowl to make bush dukkah
  2. Roll prawns in mixture and then drizzle in olive oil
  3. Add a tiny amount of olive oil onto a frying pan and place all coated prawns in on medium  heat
  4. Cook each side for 5 minutes
  5. Skewer and serve
