Lemon Myrtle and Thyme Baked Fish

Lemon Myrtle & Thyme Baked Fish


Prep time: 5 minutes

Cook time: 20 minutes


  • 1 lemon
  • 1 lime
  • 6 bay leaves
  • 3 sprigs of thyme
  • 1 tsp ground lemon myrtle
  • 1 medium white fish fillet


  • lay a sheet of baking paper down on a baking tray
  • squeeze half of the lemon and half of the lime onto the paper along with 3 bay leaves
  • lay the fish on top
  • cover the fish with the other halves of the lemon and lime, 3 bay leaves, thyme and lemon myrtle
  • lay the used lemon and lime next to the fish in baking tray
  • cover the tray with aluminium foil and bake for 20-25 minutes
